Ingredients

  • 3 eggs (for one person)
  • Salt and pepper to taste
  • 1 spoon of truffle jus
  • Truffle crumb (size of half an egg yolk)
  • Olive oil for cooking
  • Optional: Fresh truffle slices for garnish

Method

  1. Break three eggs into a bowl
  2. Add a pinch of salt and pepper
  3. Add a spoon of truffle jus
  4. Add a dollop of truffle crumb (about the size of half an egg yolk)
  5. Mix the ingredients together
  6. Heat olive oil in a pan using the biggest burner (high heat)
  7. Pour in the egg mixture
  8. Cook quickly. An omelette is a one minute operation
  9. Finish with a little olive oil drizzled on top 
  10. If desired, place a few thin slices of fresh truffle on top of the hot omelette.
